We are very excited to welcome Mark Lawton as our new Head Chef at The View restaurant at the Harbour Heights Hotel.

Mark has a wealth of culinary experience and is looking forward to creating beautiful classical cuisine befitting to the Harbour Heights Hotel elegant venue. Mark’s classic style new menu celebrates exquisite traditional elegant dishes with bold flavours and modern accents – expect a treat for your eyes and taste buds.

Mark Lawton

  • Mark’s passion for food began from a young age and became a true obsession when he started working for a local family restaurant in his hometown of Worthing, West Sussex, at then Casa d’Italia. Mark says, “Everything that was made there was freshly prepared, classic, Italian cooking. I started off as a Kitchen Porter and soon developed a love for food when I started helping out on making different pastas. Eventually they entrusted me to make ravioli,  linguine, tagliatelle and finally in to cooking the dishes. That was when I fell in love with cooking! I enjoyed the adrenalin and buzz of the kitchen before, during and after service. I stayed there for a year before pursuing my professional career as a Chef”.
  • Mark then went on to serve 4 ½ years in the military after initially being trained in classical French cookery. “It was an opportunity to be trained classically in French cooking and during those times, there wasn’t a lot of colleges in the country that were doing that apart from the well known ones such as Westminster College in which I couldn’t really afford to live in London so I went for the best route at the time”After leaving the military in 2008, Mark joining The Botley Hotel in Southampton as Senior Sous Chef with Head Chef Steve Lewis, gaining 2AA Rosettes. Thirsty for knowledge and experience Mark then travelled to London for an opportunity to work with the best Chef’s in the industry. In 2009, Mark joined the Gordon Ramsay Group as a Demi Chef at Claridge’s Hotel and then onto Restaurant Gordon Ramsay at Royal Hospital Road, where he worked under Chef Patron, Claire Smyth.Mark then joined the Exclusive Brooks Private Members Club in 2012, one of the oldest Private Members Club in London, as Sous Chef, working under Richard Tonks. Richard, an ex Roux Chef, worked for the Roux Brothers for 9 years at the Waterside in Bray and directly for Albert Roux. Mark explains, “this was my finishing school, Richard not only kept my classical heritage but at the same time gave me the freedom as his Sous to make decisions on running the kitchen and he supported everything that I did at my time in the club. He was like a father figure to me and I can only thank him for everything he’s done for me”.Mark’s career followed on to achieve 2AA Rosette within a year at the Mandolay Hotel in Guildford. Then a Michelin Plate, L’assiette Michelin, in the 2018 Michelin Guide at the Leconfield Restaurant, Petworth. Mark then spent short time at The Randolph Hotel, Oxford as Executive Chef, followed by La Belle Epoque where he initially retained 3AA Rosettes.
  • And to continue Mark’s glowing career he will start at the Harbour Heights Hotel in May with his new exciting menu for ‘Mark Lawton at the The View Restaurant‘. Where diners will enjoy his classic cuisine combined with seasonal produce, individualistic flare and elegant presentation.
