Welcoming Simon Braz, our new Head Chef at The View Restaurant

A warm welcome to Simon Braz, our new Head Chef at the Harbour Heights Hotel, Sandbanks.

 

  • Simon enjoys a reputation for creating outstanding, beautifully presented locally sourced cuisine that looks as good as it tastes! With his boundless energy, alongside his wealth of over 18 years’ culinary experience, working in Sussex, Devon and Dorset – we are all already enjoying his fantastic cuisine at the Harbour Heights Hotel.
  • Simon says “It’s an absolute privilege to be Head Chef at the Harbour Heights’ The View Restaurant. My passion is creating great locally sourced flavoursome dishes which taste amazing and look incredible.”
  •  The View Restaurant offers a variety of modern European cuisine with a slight Asian twist – using seasonal produce, individualistic flare and elegant presentation.
  • Currently on the menu we have mouth-watering Cornish Scallops with cauliflower, strawberry vinegar, cods roe emulsion and nasturtium. Plus, Saddle of Lamb with a spiced chickpea panisse, Miatake mushrooms, courgettes with a beautiful pine nut dressing. And for those with a sweet tooth a delicious Dark Chocolate Fondant with a Miso Salted Caramel Sauce.

 


About Simon…

  • East Sussex born Simon, has always had a passion for cooking, stemming back to his family’s Portuguese roots where meals were an exciting occasion – with many courses all beautifully created with the freshest local ingredients and perfectly blended seasoning.
  • Cooking with family and friends, he discovered his natural talent and love for cooking. And at 16 years old, he enrolled in the Eastbourne College studying Cookery Hospitality, Bakery and Advanced Cookery.
  • After his studies, he started to work for small restaurants in Sussex. In the meantime, he worked in awarded restaurants as a Stagiaire to improve his skills and meet inspirational Chefs including – Tom Kerridge (Hand & Flowers, 2-Michelin-star pub), Mark Raffan (Gravetye Manor, Michelin-star restaurant) and Michael Wignall (Gidleigh Park, 2-Michelin-star restaurant).
  • Simon at FJB Hotels

    In 2012, he applied to FJB Hotels and joined Loic Gratadoux’s team at Harbour Heights Hotel. Working in an award-winning restaurant was a true inspiration and his bountiful energy and enthusiasm were a great delight to Loic and the team.
  • A year later he moved across to the Haven Hotel as a Chef de Partie under the supervision of Executive Head Chef, Jason Hornbuckle. Jason, saw Simon’s potential and encouraged him through the stages to ‘Sous Chef’.
  • Simon took on the role of Head Chef at the Chine Hotel’s Gallery Bar & Brasserie in 2018 and now moving onto become the Head Chef at the Harbour Height Hotel for 2021. With Simon’s talented brigade of Chefs and his inspiration, the Point Restaurant menus will be a real delight to discover.
